Lobster Brie Grilled Cheese Sandwich
Ingredients:
- 8 slices Aunt Millie's Hearth 100% Whole Wheat Bread
- 1 lb. lobster meat (cooked, shelled, and diced)
- 1/4 lb. brie cheese, diced
- 1/4 cup low-fat mayonnaise
- 1/2 tsp. tarragon, finely chopped
- 1 garlic clove, minced
- 1/2 tsp. lemon juice (1/2 lemon)
- 1/8 tsp. salt
- Dash of pepper
- 4 slices sharp cheddar cheese
- Butter
Yield: 4 Sandwiches
Directions:
- Mix the lobster, brie, mayonnaise, tarragon, garlic, lemon juice, salt, and pepper in a bowl.
- Butter one side of each slice of bread.
- Top four of the unbuttered sides with the lobster mixture.
- Top with remaining buttered bread slices.
- Cook sandwich on each side until golden and crispy. Remove sandwich from heat and let set for a few minutes.
