Portabello Veggie Sandwich

Portabello Veggie Sandwich

100% Whole Wheat Slimwich

Ingredients:

  • 1 Package Aunt Millie's 100% Whole Wheat Slimwiches
  • 2 Tbsp. olive oil
  • 4 slices red onion
  • 1/2 cup chopped red sweet pepper
  • 4 Tbsp. finely chopped garlic
  • 4 large portabello mushroom caps
  • 1/4 cup low-fat Italian dressing
  • 4 Tbsp. purchased basil pesto
  • 1 cup Spinach leaves
  • 8 slices Roma tomatoes

Yield: 4 Servings

Directions:

  1. In a medium skillet, heat olive oil over medium heat.
  2. Add the onion, pepper, and garlic.
  3. Saute until vegetables are tender.
  4. Place mushrooms in a baking pan, cap side up, and brush with half of the Italian dressing.
  5. Broil for approximately 3-5 minutes.
  6. Turn mushrooms over, gill side up, and brush with the remaining Italian dressing.
  7. Broil for another 3-5 minutes.
  8. Spread each side of the Slimwich with 1.2 tsp. of the basil pesto.
  9. Layer the spinach, vegetable mixture, mushrooms, and tomatoes onto one half of the slimwich.
  10. Top with other Slimwich half.
