Spicy BBQ Chicken Mini Pizza
Ingredients:
- 2 Tbsp. BBQ sauce
- 4 Tbsp. pizza sauce (or make your own by combining 2 Tbsp tomato paste, ¼ cup water, oregano and salt to taste)
- 2 ounces grated mozzarella cheese
- 1 ½ ounce shredded chicken breast
- ½ tsp. Cajun seasoning
- ½ ounce chopped red onion
- ½ ounce crumbled blue cheese
- 2 100% Whole Wheat Slimwiches
Yield: 4 pizzas
Directions:
- Preheat oven to 400 degrees F.
- Open Slimwiches and lay open-faced on non-greased cooking sheet.
- Mix pizza and BBQ sauce until blended. Spread sauce on top of Slimwich halves.
- Layer with mozzarella cheese, red onion, blue cheese, and shredded chicken breast mixed with Cajun seasoning.
- Bake for 5 minutes at 400 degrees F or until cheese is melted.
- Let pizzas cool for approximately 2 minutes before eating.
