Chocolate Coconut Bread Pudding

Cup 'O Chocolate-Coconut Bread Pudding

Light Whole Grain Bread

Ingredients:

  • 1 25-Calorie packet diet hot cocoa mix
  • Dash salt
  • 1/2 cup fat-free liquid egg substitute
  • 1/4 tsp. coconut extract
  • 2 slices Aunt Millie's Healthy Goodness Light Whole Grain Bread
  • 1 tsp. mini semi-sweet chocolate chips
  • 10 mini marshmallows
  • nonstick cooking spray

    Yield: 1 serving

    Directions:

    1. Combine cocoa mix and salt in glass.
    2. Add 1/4 cup very hot water and stir until ingredients have dissolved.
    3. Add egg substitute and coconut extract, and stir. Set aside.
    4. Toast bread and tear into cubes.
    5. Spray a large microwave-safe mug lightly with nonstick spray.
    6. Add bread cubes and top with cocoa-egg mixture.
    7. If needed, stir gently to ensure bread is thoroughly soaked.
    8. Top evenly with chocolate chips and marshmallows.
    9. Microwave for about 2 minutes and 15 second, until bread pudding is set. (It will puff up once set.)
