Tex-Mex Eggs Benedict
Ingredients:
- 4 Aunt Millie's Sourdough English muffins, toasted
- 8 large eggs, poached or fried if desired
- 1 lb. bacon, fried
- 4 avocados, sliced
- 2 c. chili con queso sauce
- 1/4 c. cilantro, chopped
Yield: 8 servings
Directions:
- Lay out one half of each English muffin.
- Top each with egg, avocado, bacon, and desired amount of chili con queso sauce.
- Finish with a sprinkling of fresh cilantro.
