Italian Sausage and Olive Brunch
Ingredients:
- 3 cups Aunt Millie's plain croutons
- 1 lb. sweet Italian sausage (casings removed)
- 1/4 c. minced onion
- 1 large garlic clove, minced
- 8 oil-packed sun-dried tomatoes, drained and chopped into small pieces
- 1/2 c. sliced black olives
- 8 eggs
- 1 3/4 c. milk
- 10 oz. package of frozen spinach, thawed and squeezed dry
- 8 oz. package Italian style shredded cheese
Yield: 10 Servings
Directions:
- Spray a 9" x 12" baking dish with cooking spray. Spread croutons over bottom of the pan.
- Brown the sausage, onion, and garlic in a medium skillet over medium-high heat. Drain off the fat when thoroughly cooked.
- Add the tomatoes and black olives to the sausage mixture.
- In a large mixing bowl stir the eggs, milk, spinach, and cheese.
- Cover and refrigerate at least 8 hours or overnight.
- Preheat oven to 350 degrees.
- Place in oven and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
