Herb Baked Eggs

100% Whole Wheat English Muffins

Ingredients:

  • 1 package Aunt Millie’s Whole Wheat English Muffins
  • 6 Tbsp. butter, softened
  • 12 slices Canadian bacon
  • 1 dozen eggs
  • 6 Tbsp. heavy cream, divided
  • 2 c. grated sharp cheddar cheese
  • ⅛ tsp. garlic powder
  • ¼ tsp. dried thyme
  • ¼ tsp. dried parsley
  • ¼ tsp. dried rosemary
  • ⅛ tsp. red pepper flakes
  • 2 Tbsp. grated Parmesan cheese

Directions:

  1. Preheat oven to 350 degrees.
  2. Split 6 English muffins in half, and butter each with 1/2 tablespoon of butter. Place into the bottom of a ramekin.
  3. Top each with one slice of Canadian bacon and an egg.
  4. Top each egg with ½ tablespoon of cream.
  5. Mix together the garlic powder, thyme, parsley, rosemary, red pepper flakes. Set aside.
  6. Bake for approximately 10 minutes and remove from the oven.
  7. Turn oven to broil.
  8. Sprinkle the grated cheese across each ramekin, and add a dash of the herb mixture.
  9. Place ramekins under the broiler until the egg is set and cheese is melted.
